Ingredients
3 tablespoons butter or margarine
1/2 8-ounce package herb-seasoned stuffing mix
1/4 cup water
3 tablespoons chopped celery
3 tablespoons chopped dried apricots
1 lamb rib crown roast (5 to 6 pounds)
Directions
1. Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 1 minute at High). Add stuffing mix, water, celery and apricots; mix well.
2. Place lamb crown roast on a microwave-oven-safe roast rack set in a 2 1/2-quart microwave-oven-safe open oval casserole. Fill center cavity with stuffing. Cover with waxed paper. Cook in microwave oven
10 minutes at Medium-High.
3. Rotate casserole one-half turn. Shield meat and ribs as needed with aluminum foil. Cover with waxed paper. Cook in microwave oven 45 to 55 minutes at Medium-High. Or, if using Temperature Probe, insert probe into meaty portion of roast and cook covered in microwave oven set at 145°F and at Medium-High for medium.
4. Remove from oven, cover with foil and let stand 10 minutes.
