Crown Roast Of Lamb Recipe

Ingredients
1 package (6 oz.) long grain and wild rice
1 small onion, chopped
1/4 cup sliced celery
1/4, cup sliced natural almonds
2 tablespoons butter or margarine
2 small oranges, peeled, sectioned and chopped
1/4 cup orange marmalade
Browning sauce
3 pound crown roast of lamb
Directions
Prepare rice according to package directions, omitting butter.
In medium glass bowl, cook celery, onion, almonds and butter 3 to 4 minutes at HIGH, or until vegetables are tender crisp.
Stir vegetables and oranges into the rice; set aside.
Heat marmalade in small glass bowl at MEDIUM 1 minute, or until melted.
Brush inside and outside of roast with browning sauce, then marmalade.
Set roast on microwave roasting rack set in 12x8-inch dish.
Cover with wax paper.
TO COOK BY TEMPERATURE: Insert probe into meaty portion of roast, making sure tip of probe is not touching bone or fat.
Cook on Insta-Matic Temp or Programmable Temp according to desired doneness of meat; see roasting chart TO COOK BY TIME: Cook at MEDIUM-LOW 20 to 22 minutes for medium, 28 to 30 minutes for well, or until roast registers 130°F or 170°F when tested with a conventional meat thermometer. (Remove roast from oven before reading temperature.).
TO COMPLETE: After cooking, transfer roast to serving platter.
Let stand, covered.
Reheat stuffing mixture at HIGH for 2 to 3 minutes, or until hot.
Fill center of roast with stuffing mixture.
