Succulent Crown Roast Of Lamb Recipe

Ingredients
1 x 3 oz package parsley and thyme stuffing
1 small egg
1/2 cup sliced mushrooms
1 crown roast, about 4 1/2 lb when stuffed
1 can apricot halves, drained, to garnish
Browning agent:
3 tablespoons tomato sauce
1 teaspoon dark brown sugar
Directions
1 Make up the stuffing according to packet instructions. Allow to stand for 10 minutes. Add the egg and mushrooms.
2 Put the crown roast on an upturned saucer in a 30 x 20 x 5cm/12 x 8 x 2 inch ovenproof glass dish. Fill the centre cavity with stuffing.
3 Mix tomato sauce and brown sugar together and brush over the joint and stuffing. Insert microwave meat thermometer between two of the chops.
4 Cover with a split roasting bag and microwave on full power for 30-40 minutes until the thermometer reads 75°C/170°F.
5 Remove from the oven, cover with a 'tent' of foil and allow to stand until the temperature rises to 82°C/180°F about 30 minutes.
6 Garnish with apricots and cutlet frills, if liked.
