Ingredients
| Orange marmalade | 1/4 Cup (16 tbs) | |
| 2 racks of lamb (about 2 3/4 lb.), cut and tied into crown roast | ||
| Celery | 1/4 Cup (16 tbs), thinly sliced | |
| Onion | 1/4 Cup (16 tbs), finley chopped | |
| Butter/Margarine | 2 Tablespoon | |
| Cooked rice | 2 Cup (16 tbs) | |
| 1 small orange, peeled, sectioned and chopped | ||
| 1 small grapefruit, peeled, sectioned and chopped | ||
| Salt | 1/2 Teaspoon | |
| Ground sage | 1/8 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Browning sauce | ||
Directions
In small glass bowl, heat marmalade at medium 1 minute, or until marmalade is melted; set aside.
In oblong baking dish, set roast on microwave oven safe roasting rack.
Heat at medium 10 to 12 minutes.
Let stand, covered, 5 minutes.
Meanwhile, in medium glass bowl, combine celery, onion, and butter.
Heat at medium 2 1/2 to 3 minutes, or until celery is tender.
Stir in rice, orange, grapefruit, salt, sage and pepper.
Heat at medium 2 to 3 minutes.
Transfer roast to microwave oven safe serving platter; gently fill center with stuffing mixture.
Brush outside of roast with browning sauce, then marmalade.
