Crispy Small Fish Recipe

Ingredients

 
1/2 kg. small fish, cleaned, washed and dried
 
1 tbsp. soya sauce
 
1 tbsp. cooking wine
 
1 tsp. salt
 
1 tbsp. cornflour
 
1 egg white (optional)
 
1 cup vegetable oil
 
1 cup hot szechwan sauce

Directions

Place fish in a bowl, add salt, wine, soya sauce, egg white and cornflour.
Rub well.
Leave aside for 1 hour.
Heat oil and deep fry until crisp.
Drain on an absorbent kitchen paper.
Serve hot with Szechwan Sauce.
VEGETARIAN VERSION:
Omit fish.
Use 250 gms. Indian Cottage Cheese cut into thin strips and follow the recipe as directed above.
