Potato Salad Recipe Video

Potato salad is a summer staple for my family. I like to serve it up alongside hot dogs, burgers and corn on the cob. And, while I love classic summertime foods, I always like to mix it up a bit. My crispy potato salad is a great new take on this classic dish. And the best part is, it can be made in just 2 easy steps. Serve this up with BBQ Stuffed Burger or the Pittsburgh Panini Burger and you have a home run of a meal!

Directions

1. Pre-heat your oven to 450 degrees.
2. Wash your potatoes and then cut them. Do this by first cutting the potato in half, rotate it 90 degrees and cutting the potato in half again. Holding the potato together to keep its form, cut the potato into thick slices (be sure to see my video as this is hard to explain).
3. Place the cut potatoes in the oven and cook for 1 hour, or until the potatoes are golden brown and crispy.
4. Remove from the oven, and while the potatoes are still hot, add all remaining ingredients. Stir together and serve!

I can just imagine biting into those crispy potatoes...simply mouthwatering recipe...they do look yummy but i wonder how many calories this salad carries..could be a disaster if you are on a diet...but who cares right!

This cripsy potato salas is lovely!!! I either steam the potatoes or bake it when i use them in salad.. But to get the cripsy.... My mind could never work that way. So do you fry or bake to get the potatoes crispy? SOrry, the video is not playing for me that's the reason i though I wil ask you the question right away!
