Ingredients

 Pork knuckles1 , cleaned and cut the toes (Whole Front)
 Black peppercorn1 Tablespoon
 Rock salt6 Tablespoon
 Garlic3 Tablespoon, crushed
 Bay leaf2
 Oil4 Cup (64 tbs)
 Water1⁄4 Cup (4 tbs)
 Water1⁄4 Cup (4 tbs)
 Onion1 , diced
 Vinegar1⁄4 Cup (4 tbs) (Mama Sita's Premium)
 Vinegar1⁄4 Cup (4 tbs) (Mama Sita's Premium)
 Finger chili2 , sliced

Directions

In a large casserole, combine water, rock salt, vinegar, garlic, bay leaf and black peppercorns. Stir to mix.
Add pork knuckles. Cover.
Bring to a boil. Simmer for 1 1/2 hour or until pork is tender.
Drain in a colander. Set aside in refrigerator for 12 hours or overnight to dry.
Aftwer drying, heat oil and deep fry pork until golden brown and crispy.
Combine all the ingredients to make the sauce.
Serve with sauce.
