Crispy Fried Chicken Recipe
Eating just one is not possible for any one is my claim for this recipe of Crispy Fried Chicken. If you have plenty of Chicken on hand then Crispy Fried Chicken is the thing to make. This is the most comforting Side Dish recipe I have come across. In my view, if one calls oneself a good cook, one must have a personal recipe of Crispy Fried Chicken, just like I do.
Ingredients
1 Washington fryer, cut up
1/2 c. lemon juice
1 tsp. Tabasco
1/3 c. flour
1/3 c. cornmeal
2 T. grated Parmesan cheese
1 tsp. salt
1/2 tsp. grated lemon rind
1/4 tsp. dried leaf basil
1/4 tsp. dried leaf oregano
1 c. oil
Directions
Marinate chicken pieces for 1 hour in mixture of lemon juice and Tabasco.
In shallow dish mix flour, cornmeal, cheese, salt, lemon rind, basil and oregano.
In large skillet, heat oil to 350° F.
Coat chicken on both sides with flour mixture; place skin side down in oil.
Cook 15 minutes on each side until fork tender.
Drain well on absorbent paper.
