Ingredients

 
Broiler-fryer legs - 12 (2-1/2 to 3 lb)
 
Unsifted all-purpose flour - 3/4 cup
 
Packaged cornflake crumbs - 3/4 cup
 
Salt - 2 teaspoons
 
Poultry seasoning - 1/2 teaspoon
 
Pepper - 1/4 teaspoon
 
Eggs - 2, beaten
 
Butter or margarine - 1/2 cup, melted

Directions

GETTING READY
1. Preheat oven to 400F.
2. To prepare chicken legs wipe them with damp paper towels.

MAKING
3. In a clean paper bag, combine flour, cornflake crumbs, salt, poultry seasoning and pepper.
4. Dip chicken legs, a few at a time, into beaten egg and then shake in bag, to coat with flour mixture.
5. Grease a shallow baking pan and arrange the chicken legs in single layer.
6. Brush chicken with melted butter, cover pan with foil bake 30 minutes and remove foil.
7. Increase oven temperature to 450F and bake 25 to 30 minutes until golden-brown.

SERVING
8. Garnish the chicken legs as desired and serve along with sauce of choice.
