4 medium-sized onions
60g (2 oz) butter
salt and pepper to taste
45g (1 1/2 oz/ 2/3 cup) fresh breadcrumbs
2 tablespoons grated Parmesan cheese
2 teaspoons chopped thyme, or 1 teaspoon dried
Directions
1 Preheat the oven to 190C (375F/Gas 5). Peel the onions and cut them in half crossways. Place in a buttered dish and dot the tops with half of the butter. Season with salt and pepper and cover with foil. Bake in the oven for about 1 hour, until the onions are almost tender.
2 Melt the remaining butter and mix with the breadcrumbs, cheese, thyme, salt and pepper. Uncover the onions and spread each one with a little of the breadcrumb mixture. Return to the oven and cook uncovered for 15-20 minutes, until the topping is crisp and golden brown. Serve hot.
