Crispy Gammon Joint Recipe

Ingredients
1 smoked ham about 4 lb, soaked in water overnight
1 tablespoon honey
1/2 cup light brown sugar mixed with 1 teaspoon dry, mustard, cloves, candied cherries, halved
Directions
1 Put the drained gammon (ham) into a roasting bag with the honey.
2 Arrange on an upturned saucer in a round casserole dish. Slit the roasting bag at the base, to enable the steam to escape, and microwave on full power for 10 minutes.
3 Turn the joint over and microwave on power 8 for 26 minutes, giving the dish a half turn, twice, during cooking.
4 Allow to stand, covered with a 'tent' of foil, for 20 minutes.
5 Remove the gammon (ham) and peel away the skin. Score the fat into diamond shapes with a sharp knife and press the sugar and mustard mixture onto the fat. Press a clove into each diamond.
6 Place under a preheated hot grill (broiler) until gammon (ham) is crisp and brown. If liked, decorate the joint with cherries and serve with vegetables of your choice. Delicious hot or cold.
