Crispy Fried Chicken Tenders with Spicy Creole Mustard Sauce Recipe Video

If there is one thing we enjoy during the holidays it's a wonderful meal. We picked up a great recipe that everyone in the family will enjoy, crispy chicken tenders with spicy Creole mustard. Anne Theis joins us from Salem Hospital in the Community Health Education Center to share one of her family favorites with us. Anne is a great cook and has self-published a cookbook to share with family and friends. She found this recipe on-line about 20 years ago but did some major changes to make it more flavorful.

Directions

GETTING READY
1. In food processor, grind cereals until crumbly but some 1/8-inch chunks are still visible.
2. Spread in a shallow pan. In a bowl, combine flour, onion, garlic and pepper.
3. In a separate bowl, combine the eggs and milk.

MAKING
4. Dredge chicken in seasoned flour.
5. Dip in egg mixture, coating evenly.
6. Dredge in cereal mixture, coating well. Arrange on wax paper. Keep aside to rest.
7. For Creole Mustard Sauce: Combine all ingredients and mix well. Keep aside or refrigerate until ready to serve.

FINALIZING
8. Preheat oil in deep fryer to 325 degrees. Deep fry chicken in batches for 3 1/2 minutes or until golden brown. Drain.

SERVING
9. Serve the Creole Mustard Sauce on the side with Crispy Chicken Tenders.
