 Bread crumbs1/2 Cup (16 tbs)
 Wheat germ1/2 Cup (16 tbs)
 Salt1/4 Teaspoon
 Pinch of cayenne
 1/4 tsp basil, thyme or mixed herbs
 Eggs2
 Eggplant1 , sliced
 1/2 cup cheese of your choice, grated or sliced

Directions

Preheat oven to 350 °F (175 °C).
Oil a cookie sheet.
Set aside.
On a plate, combine bread crumbs, wheat germ and seasonings.
In a bowl, beat eggs.
Dip in eggplant slices.
Dredge with seasoned bread crumbs.
Transfer to a cookie sheet.
Cook in oven 20 minutes.
Remove from oven.
Top with cheese.
Continue cooking until golden brown.
