Crispy Eggplant Recipe
Crispy Eggplant is a must try for Eggitarians. Crispy Eggplant is very easy to make. Crispy Eggplant has a nice taste.
Ingredients
| Bread crumbs | 1/2 Cup (16 tbs) | |
| Wheat germ | 1/2 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Pinch of cayenne | ||
| 1/4 tsp basil, thyme or mixed herbs | ||
| Eggs | 2 | |
| Eggplant | 1 , sliced | |
| 1/2 cup cheese of your choice, grated or sliced | ||
Directions
Preheat oven to 350 °F (175 °C).
Oil a cookie sheet.
Set aside.
On a plate, combine bread crumbs, wheat germ and seasonings.
In a bowl, beat eggs.
Dip in eggplant slices.
Dredge with seasoned bread crumbs.
Transfer to a cookie sheet.
Cook in oven 20 minutes.
Remove from oven.
Top with cheese.
Continue cooking until golden brown.
