Crispy Barbecued Pork Recipe
Ingredients
| 1.5kg belly of pork, in one piece | ||
| Salt | To Taste | |
| Light soy sauce | 1 Tablespoon | |
| 1 tspn 5-spice powder | ||
| Turnip flowers | ||
| Radish | ||
| Waterlily | ||
Directions
Pour a kettleful of boiling water over the skin of the pork, drain and dry.
Rub the pork with salt and leave to dry for 45 minutes.
Score the skin of the pork in a diamond pattern.
Pierce the meat with a skewer in several places.
Rub the soy sauce and 5-spice powder into the pork.
Cover and stand for 1 hour.
Place the pork, skin side up, in a roasting pan.
Place in a preheated oven and roast at the higher temperature for 20 minutes.
Reduce the heat and continue to cook for 50-55 minutes, or until the meat is tender and the skin is crisp.
If necessary place the pork under a preheated grill for 1-2 minutes to crisp up the skin.
