Crispy Chocolate Wafers Recipe
Ingredients
2 tablespoons (1/4 stick) butter, room temperature
2 ounces unsweetened baking chocolate, grated
2/3 cup firmly packed light brown sugar
3 egg whites, unbeaten
1 teaspoon vanilla
1 teaspoon dark rum
1/4 cup plus 1 tablespoon cake flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Directions
Lightly butter or grease cookie sheets.
Preheat oven to 400°F.
Cream butter in medium bowl of electric mixer.
Add chocolate and sugar and blend thoroughly.
Add egg whites, vanilla and rum and beat well.
Add dry ingredients and mix just until flour barely disappears; do not overheat.
Drop dough by exact teaspoonfuls onto prepared cookie sheets, leaving 1 inch space between to allow for spreading.
Bake 7 to 8 minutes, or until crisp.
Remove immediately from sheets and transfer to racks to cool. (If the cookies become soft, place in single layer on cookie sheet and recrisp in 350T oven about 8 to 10 minutes.)
