Crisp Banana Waffles Recipe
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 1/4 teaspoon each ground cinnamon and ground nutmeg | ||
| Sugar | 2 Tablespoon | |
| Eggs | 2 , separated | |
| Milk | 1 Cup (16 tbs) | |
| Bananas | 1 Cup (16 tbs), mashed | |
| 6 tablespoons butter or margarine, melted and cooled | ||
| Bananas | 6 | |
| Lemon juice | ||
| 1 cup chopped almonds or macadamia nuts | ||
Directions
In a small bowl, stir together flour, baking powder, salt, cinnamon, nutmeg, and sugar; set aside.
In a medium-size bowl, beat egg yolks and milk until blended.
Add flour mixture and stir until blended.
Stir in mashed bananas and butter.
In a third bowl, beat egg whites with clean beaters until just stiff, moist peaks form; fold into batter.
Bake waffles in a preheated waffle iron according to manufacturer's directions.
While waffles bake, prepare bananas.
Peel bananas and cut into 1/4-inch slices; place in serving bowl.
Sprinkle lemon juice over bananas (to prevent browning) and toss lightly to coat.
Put nuts in another serving bowl to pass at the table.
