Crepes Suzette Recipe

Ingredients
8 crepes
30g butter, melted
4 cubes sugar
2 oranges
Extra 60g butter, softened
2 tablespoons Grand Marnier, Cointreau or curacao
Sifted icing sugar for dusting
3 tablespoons brandy
Directions
Prepare and make crepes.
Brush cooked crepes with melted butter and keep warm in oven.
Rub each sugar cube over skin of oranges to remove oil.
This process saturates sugar with oil from the orange rind and the oranges will look as though their rinds have been grated.
Crush sugar and work in softened butter and liqueur.
Spread each warm crepe with orange butter and fold into a triangle.
Arrange crepes overlapping down centre of a heated serving dish and dust with icing sugar.
Heat brandy in a small saucepan, set alight and pour over the crepes.
Serve at once.
