Crepes Suzette Recipe

Ingredients
Recipe Feather-Light pancakes
1/4 cup butter or margarine
3 tablespoons sugar
1/2 cup orange juice
2 teaspoons lemon juice
1/3 cup orange liqueur (Grand Marnier or Cointreau)
1 tablespoon grated orange rind
1/2 teaspoon grated lemon rind
1/2 cup toasted slivered almonds
Directions
Prepare pancakes using 2 or 3 tablespoons batter.
Melt butter or margarine in blazer pan of chafing dish or crepes suzette pan over table top burner or butane unit over direct high flame.
Stir in sugar, juices, 3 tablespoons liqueur, and rinds.
Heat until bubbly, stirring constantly.
Roll up pancakes; place in sauce and heat.
Turn crepes carefully to heat evenly.
Spoon sauce over crepes while heating.
Drizzle remaining liqueur over crepes; ignite.
Let flame die down, sprinkle with almonds .
