Crepes Romaine Recipe

Ingredients
| Onion | 1 Tablespoon, chopped | |
| Butter | 1 Tablespoon | |
| Flour | 1 Tablespoon | |
| Light cream | 1 Cup (16 tbs) | |
| Smoked salmon | 4 Ounce, diced | |
| Hard-cooked eggs | 3 , chopped | |
| Capers | 2 Tablespoon | |
| Chopped dill | 1⁄2 Teaspoon | |
| Fresh lemon juice | 1⁄2 Teaspoon | |
| Grated cheese | 2 Tablespoon | |
| Warm crepes | 8 |
Directions
Fry onion in butter until soft.
Stir in flour.
Add cream a little at a time.
Let simmer for 3 to 4 minutes and then add rest of ingredients.
Season to taste.
Place a heaping tablespoon on each crepe, roll up and place in a buttered oven-proof dish.
Sprinkle with grated cheese, dot with butter, and bake in a preheated oven (400°F) for 5 to 8 minutes or until the cheese has melted and crepes are hot throughout.
