Ingredients

 Onion1 Tablespoon, chopped
 Butter1 Tablespoon
 Flour1 Tablespoon
 Light cream1 Cup (16 tbs)
 Smoked salmon4 Ounce, diced
 Hard-cooked eggs3 , chopped
 Capers2 Tablespoon
 Chopped dill1⁄2 Teaspoon
 Fresh lemon juice1⁄2 Teaspoon
 Grated cheese2 Tablespoon
 Warm crepes8

Directions

Fry onion in butter until soft.
Stir in flour.
Add cream a little at a time.
Let simmer for 3 to 4 minutes and then add rest of ingredients.
Season to taste.
Place a heaping tablespoon on each crepe, roll up and place in a buttered oven-proof dish.
Sprinkle with grated cheese, dot with butter, and bake in a preheated oven (400°F) for 5 to 8 minutes or until the cheese has melted and crepes are hot throughout.
