Crepes Madrilene Recipe
Ingredients
| Onion | 1 , sliced | |
| Vegetable oil | 1 Tablespoon | |
| 4 tomatoes, peeled and cut in wedges | ||
| Dried thyme | 1 Teaspoon | |
| 1 green pepper, sliced in strips | ||
| 1 red pepper, sliced in strips | ||
| Several pitted black olives | ||
| Several pitted green olives | ||
| Garlic | 1 Clove (5gm), crushed | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 6 crepes | ||
Directions
Heat oil and saute the onion until soft.
Add tomatoes, thyme, peppers, olives, garlic, salt and pepper.
Simmer for a few minutes to soften tomatoes and peppers.
Spoon over crepes, and garnish.
