Breakfast Crepes Suzette Recipe
This recipe for Crepes Suzette comes as a boon for a special person like me and may also prove to be good for you. Ingredients
2 eggs
1/2 cup all-purpose flour
3/4 cup milk
1 1/2 tablespoons sugar
1/4 teaspoon vanilla
Dash salt
Shortening
1/4 cup butter or margarine
1/4 cup orange-flavored liqueur
1/4 cup orange juice
3 tablespoons sugar
2 tablespoons brandy
Directions
With rotary beater beat together eggs, flour, milk, 1 1/2 tablespoons sugar, vanilla, and salt.
Heat heavy 6-inch skillet till a drop of water dances on it.
Brush skillet lightly with shortening.
Pour in about 2 tablespoons batter.
Lift skillet and tilt from side to side till batter covers bottom.
Cook till bottom of crepe is lightly browned and top appears dry, about 1 1/2 minutes; turn out on paper toweling.
Repeat with remaining batter.
In chafing dish combine butter or margarine, orange-flavored liqueur, orange juice, and 3 tablespoons sugar; heat till bubbly.
Fold each crepe in quarters, browned side out, and arrange in sauce.
Simmer till sauce thickens slightly, basting crepes frequently.
Warm brandy in small saucepan just till hot.
Do not bring to boiling.
Ignite and pour flaming brandy over crepes and orange sauce.
