1 cup flour.
1/4 teaspoon salt
1 tablespoon confectioners' sugar
3/4 cup milk
3 eggs, slightly beaten
Dash rum
Shortening
2 oranges, grated peel and juice
10 lumps sugar
4 to 6 tablespoons butter or margarine
1 to 2 small glasses Grand Marnier
2 small glasses maraschino
Slivered almonds, toasted

How to make Crepes Suzette

Prepare a batter of the flour, salt, confectioners' sugar, milk, eggs; and rum; let rest about 30 minutes.
Lightly grease a 6 inch (15 centimeter) skillet.
Heat to moderately hot.
Spoon about 2 tablespoons batter into the skillet and tilt back and forth to spread batter thinly and evenly.
Cook each crepe until lightly browned on both sides.
Fold crepes in quarters and keep warm.
Sprinkle grated peel over sugar lumps.
Melt butter in a clean skillet.
Stir in orange juice slowly; add sugar lumps, heat and stir until sugar is dissolved.
Blend in Grand Marnier and place the folded crepes in the sauce.
Spoon some of the sauce over the crepes and let rest several minutes.
Pour maraschino over the crepes and ignite.
