Crepes Suzette Recipe
Ingredients
| 100 g / 4 oz / 1 stick unsalted butter | ||
| Sugar | 1 Tablespoon | |
| Cointreau | 4 Tablespoon | |
| 150 ml / 1/4 pt / 2/3 cup orange juice | ||
| Grated rind and juice of 1 lemon | ||
| Grated rind of 2 oranges | ||
| Orange slices to garnish | ||
Directions
Melt butter in a large frying pan, and add all other ingredients.
Heat gently.
Place a crepe in the pan, and soak both sides in sauce.
Fold it in half and in half again, to make a triangle.
Push it to one side of the pan, and continue in this way with all the crepes.
Sprinkle with sugar, and garnish with orange slices.
Just before serving, heat a little more Cointreau in a ladle.
Set it alight, and pour over the crepes.
Serve immediately.
