Crepes Suzette Recipe

Ingredients
4 lumps sugar
1 orange
1/2 cup butter
1 jigger (3 tablespoons) maraschino
1 jigger (3 tablespoons) Curacao
1 jigger (3 tablespoons) kirsch
12 crepes
Directions
1. Rub the lumps of sugar on the orange skin until they are covered with the aromatic oil. Squeeze the orange and reserve the juice.
2. Crush the sugar with half the butter and cream well.
3. Place the rest of the butter in a flat skillet or a chafing dish and, when it melts, add the orange butter. Add the orange juice, maraschino and Curacao and stir with a wooden spoon until well blended. Add the kirsch and ignite. Keep the sauce barely simmering over a spirit lamp or other low flame.
4. Add the crepes one at a time and, using a fork and large spoon, turn each crepe over in the sauce, then fold into quarters.
