Crepes Basic Recipe Recipe

Ingredients
1 cup all purpose flour
1/2 tsp salt
1/4 cup sugar
1 1/3 cups milk
2 eggs, beaten
Vanilla extract
2 tbsp butter, melted
Directions
In a bowl, sift flour.
Make a well in the center.
Set aside.
In a second bowl, dilute salt and sugar in milk.
Fold in beaten eggs.
Mix in a few drops of vanilla extract.
Pour into the center of well With a whisk, gradually fold liquid mixture into flour until creamy smooth.
Mix in melted butter.
Refrigerate 1 hour or so.
In a frying pan, ladle batter, 2-3 tbsp (30-45 mL) for each crepe.
Over high heat, cook crepes.
Flip once surface starts to bubble, and crepe seems to loosen from pan.Cook second side 1 minute or so.
