Quick Crepes Recipe

Ingredients

 
1/2 cup flour
 
Butter
 
2 eggs
 
1/2 cup milk
 
2 egg yolks
 
Oil for crepe pan
 
1/4 cup vegetable oil or melted

Directions

Put all ingredients except oil into a blender or food processor.
Blend well or put all ingredients into a bowl and whisk.
Strain if lumpy.
Batter should be the consistency of heavy cream.
Film a seasoned crepe pan with a bit of oil.
Add 2-3 tablespoons batter and swirl pan in all directions.
Fry one side until edges are brown, about 1 minute.
Turn over and fry second side about 30 seconds.
