Crepe Filling Recipe
Ingredients
| Dairy sour cream | 1 Cup (16 tbs) | |
| 1/2 cup finely chopped purple onion | ||
| 1 cup finely chopped hard cooked eggs | ||
| 1/4 teaspoon freshly ground black pepp | ||
| 2 ounces black caviar | ||
| 2 ounces golden caviar | ||
| Dill sprig | 10 , garnish | |
| Lemon wedges | 10 , garnish | |
Directions
In medium size bowl, combine sour cream, onion, eggs and black pepper.
With small rubber spatula, gently fold caviar into sour cream mixture.
Spread mixture evenly over crepe leaving a 1 inch border around edges.
Beginning at short end, carefully roll crepe.
