Creole Sauce Recipe

Ingredients
1/4 cup finely chopped green pepper
2 tablespoons minced onion
1 clove garlic
3 tablespoons butter or margarine
1 tablespoon olive oil
2 tablespoons all purpose flour
1 tablespoon chopped parsley
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup peeled and chopped tomatoes
3/4 cup beef broth
1 can (4 oz.) mushroom stems and pieces, drained
Directions
Place green pepper, onion, garlic, butter and olive oil in a 1 1/2 qt.glass casserole dish.
Cover and microwave 3 to 4 minutes or until tender.
Remove garlic and stir in flour and spices.
Gradually stir in tomatoes and beef broth.
Cover and microwave 3 to 5 minutes, stirring twice during cooking.
Stir in mushrooms.
Cover and microwave 1 to 2 minutes [ROASTS, 3 to 4 minutes].
