Creole Gumbo Recipe
Creole Gumbo rules the list of the best tasting dishes thanks to this recipe. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. Seafood is the key ingredient in Creole Gumbo. Trust me, once you taste this Creole Gumbo you are bound to prepare it again!
Ingredients
2 1/2 cups cut okra
3 tablespoons ham drippings or fat
1 large onion, chopped
2 garlic cloves, chopped
1 medium green pepper, chopped
1 8 ounce can tomato sauce
1/2 cup crab meat
1 teaspoon thyme
2 tablespoons flour
1/2 pint oysters with liquid
4 cups water
3 tablespoons ham, diced
2 medium bay leaves
1 teaspoon parsley, chopped fine
1 teaspoon salt
Dash pepper
1/2 teaspoon cayenne pepper
Directions
Heat cooker.
Brown okra lightly in ham drippings in cooker.
Combine remaining ingredients in cooker and mix well.
Place cover on cooker.
Allow steam to flow from vent pipe to release all air from cooker.
Pressure cook at 15 lbs.pressure for 15 minutes.
Reduce pressure.
