Creole Tomatoes Recipe

Ingredients

 
6 large, ripe tomatoes
 
1/4 cup butter
 
3 small onions, grated
 
1/2 green pepper, minced
 
2 stalks celery, minced
 
2 tablespoons deviled ham
 
1 can (2 oz.) mushrooms
 
1 teaspoon Worcestershire sauce
 
Dash of Tabasco
 
Salt, sugar and pepper to taste
 
2 cups cooked rice
 
Buttered crumbs
 
Paprika

Directions

Cut off tops of tomatoes and scrape out pulp.
Melt butter in pan.
Add onion, green pepper, celery and ham.
Cook a few minutes, stirring.
Dry mushrooms on a cloth and add to mixture.
Add seasonings.
Add tomato pulp and cook down for about 10 minutes.
Stir in rice.
Cook 5 minutes.
Stuff tomatoes.
Dot tops with buttered crumbs and paprika.
Bake at 450° for 15 minutes.
