Creole Liver Recipe
Ingredients
| Butter/Margarine | 1/2 Teaspoon | |
| 1 1/2 lbs. calf or beef liver, cut into 1 1/2-inch strips | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Instant minced onion | 2 Tablespoon | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Salt | 1/2 Teaspoon | |
| 1/8 teaspoon leaf marjoram or rosemary | ||
| 1/8 teaspoon ground thyme or poultry seasoning | ||
| Tomato Paste | 3/4 Cup (16 tbs) | |
| 1/2 cup condensed beef consomme | ||
| Water | 1/4 Cup (16 tbs) | |
Directions
In large fry pan, brown liver in butter on medium heat.
Add remaining ingredients.
Simmer, covered, 20 minutes for calf liver or 30 minutes for beef liver, adding small amounts of water if liquid becomes too thick.
Serve hot.
