Creole Chicken Recipe
Creole Chicken is an easy to make recipe. Creole Chicken tastes good. The mushrooms add up the taste of Creole Chicken.
Ingredients
1 1/2 cups canned whole tomatoes
5 1/2 oz tomato paste
2 tbsp onion, finely chopped
1/4 tsp salt
1/4 tsp sugar
1 tbsp vegetable oil
4 chicken breasts
1/2 cup green bell
Pepper, chopped
1/2 cup mushrooms, minced
1/4 cup onion, chopped
6 green or black olives,minced
1 garlic clove, chopped
1 tsp parsley, chopped
Pinch of thyme
1/2 oz dry sherry
Cooked rice
Directions
In a large saucepan, combine first 5 ingredients.
Over low heat, simmer 1 5-20 minutes.
Meanwhile, in a frying pan, heat oil.
Sear chicken breasts 3 minutes each side.
Place chicken in tomato mixture.
Add remaining in gredients, except rice.
Over low heat, simmer 30 minutes or until chicken is cooked.
Arrange on a bed of rice.
