Ingredients

 
3 slightly beaten eggs
 
1/4 cup sugar
 
1/4 teaspoon salt
 
2 cups light cream, scalded
 
1 teaspoon vanilla
 
1/2 cup brown sugar

Directions

Combine eggs, sugar and salt in top of double boiler.
Slowly stir in cream.
Cook over hot, not boiling water till custard coats spoon, about 8 minutes.
Continue cooking about 2 minutes longer or till custard thickens slightly.
Pour into 8-inch round baking dish or creme brulee dish.
Chill.
Sift brown sugar evenly over custard.
Set in shallow pan; surround dish with ice cubes and a little cold water.
Broil 8 inches from heat about 5 minutes, till custard has bubbly brown crust.
Serve immediately or chill, being careful not to break crust.
Serve as is, or spoon over peaches or other fruit.
