Creme Brulee Recipe

Ingredients
4 egg yolks, slightly beaten
1/4 cup sugar
2 cups heavy cream, scalded
2 teaspoons vanilla extract
1/2 cup firmly packed brown sugar
Directions
Combine egg yolks with sugar; blend thoroughly.
Gradually add hot cream, stirring until sugar is dissolved.
Strain into a 1-quart baking dish.
Blend in extract.
Place baking dish in a shallow pan with hot water and bake at 325°F 50 minutes, or until a knife inserted in custard comes out clean.
Remove from oven and set baking dish on wire rack to cool; chill thoroughly.
Before serving, sift brown sugar evenly over top.
Place under broiler with top at least 5 inches from source of heat; broil until sugar is melted.
Watch carefully so sugar will not burn.
