Ingredients
10 egg yolks
1/3 cup honey
2 tablespoons vanilla extract
1 quart milk
1/4 cup maple syrup or date sugar
Directions
Preheat oven to 325°F.
In a large bowl, beat egg yolks until lemon colored.
Beat in honey and vanilla.
In a medium-size saucepan, heat milk to scalding.
Slowly pour milk into egg yolks, whisking constantly.
Pour mixture into a 1 1/2-quart casserole.
Place casserole in a pan, then place in oven, and fill pan with water halfway to top of casserole.
Bake for about 2 hours, or until custard is firm in center.
Remove from oven and cool.
Refrigerate to chill.
Brush top of chilled pudding with maple syrup or date sugar.
Place directly under broiler for 1 to 3 minutes.
Chill.
