Create-A-Soup Recipe

Ingredients
2 medium carrots, finely shredded
2 medium zucchini, finely shredded
1/2 pound fully cooked ham, cut into very thin strips
2 cups fresh spinach, cut into narrow strips
1 8 ounce can sliced water chestnuts, drained
Grated Parmesan cheese (optional)
1 recipe Miniature Meatballs
1 recipe Stir Fried Livers
Herb-seasoned stuffing croutons (optional)
Directions
Place carrots and zucchini in a steamer basket over, but not touching, boiling water.
Cover; steam 4 minutes or just till tender.
Cool.
Cover and chill.
At serving time, let carrots, zucchini, ham, spinach, water chestnuts, and Parmesan cheese stand at room temperature.
Stir the desired vegetables, ham, Miniature Meatballs, or Stir Fried Livers into bowls of Creamy Soup Base or Beef Broth Base.
Top each serving of soup with croutons or cheese.
