1 egg, separated
 
1 cup light cream or milk
 
1 teaspoon flour
 
1/4 cup sugar
 
2 tablespoons dry mustard
 
1/2 teaspoon salt
 
1/8 teaspoon pepper
 
2 tablespoons vinegar

Directions

Beat egg yolk in small saucepan.
Add cream, flour, sugar, mustard, salt and pepper.
Blend until smooth.
Cook over medium heat, stirring constantly until mixture thickens and comes to a boil.
Stir in vinegar.
Beat egg white until stiff; fold into sauce.
Serve warm.
