Ingredients

 
1 cup sugar
 
1/2 teaspoon salt
 
1/4 cup flour
 
1 cup milk
 
2 eggs, separated
 
Rind and juice of 1 lemon
 
1/3 cup butter or margarine
 
1 8-inch baked pie shell
 
4 tablespoons sugar

Directions

Combine sugar, salt and flour in the top of a double boiler.
Mix well and stir in milk.
Cook over very low heat, stirring con- stantly, until thickened.
Beat egg yolks.
Pour the hot mixture slowly over egg yolks and mix well.
Return mixture to double boiler.
Cook over hot water about 3 minutes.
Remove from heat.
Add lemon juice and rind and butter.
Cool, stirring occasionally.
Pour into baked pie shell.
Beat egg whites until stiff but not dry.
Gradually beat in sugar until mixture stands in peaks.
Pile on top of lemon filling in pie shell.
Bake in a hot oven (425° F) 5 to 10 minutes, or until lightly browned.
Makes one 8-inch pie.
