Creamy Herring Salad Recipe
Ingredients
| 1 1/2 lb. salt herring | ||
| 2 med. Cooked potatoes, diced | ||
| 4 cold cooked beets, cubed | ||
| Apples | 4 , cubed | |
| Onion | 1 Tablespoon, minced | |
| Vinegar | 2 Tablespoon | |
| Sugar | 1 Tablespoon | |
| Pepper white | 1/4 Teaspoon | |
| Heavy cream | 1/2 Cup (16 tbs), Whipped | |
Directions
Soak herring overnight in water to cover.
Remove bone and skin from herring; cut into cubes.
Combine herring, potatoes, beets, apples, onion, vinegar, sugar and pepper; toss lightly.
Chill in refrigerator.
Fold in cream just before serving.
Garnish with sieved hard- cooked eggs, if desired.
