Creamy Cottage Cheese muffins Recipe
Creamy cottage cheese muffins are made with crumbly cottage cheese creamed with butter. Flavored with lemon zest these muffins are perfect for a lazy summer evening. Creamy cottage cheese muffins are refershing and have an light and uplifting taste.
Ingredients
| Granulated Sugar | 1/3 Cup (16 tbs) | |
| Butter/Margarine | 3 Tablespoon | |
| 1/2 cup cream-style cottage cheese 125 mL | ||
| 1 tsp grated lemon zest 5mL | ||
| Egg | 1 | |
| 1 3/4 cups homemade or packaged biscuit mix 425 mL | ||
| Milk | 1/2 Cup (16 tbs) | |
Directions
In a large bowl, cream together sugar and butter.
Beat in cottage cheese and lemon zest.
Add egg, beating well.
Stir in biscuit mix and milk just until moistened.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes.
HINT: When you are creaming butter and sugar together, it is a good idea to rinse the bowl with boiling water first.
They will cream faster.
