Ingredients
Sugar – ½ cup
Butter – 1/4cup, melted
Graham Crackers Crumbs – 2 cups
Raspberry Gelatin – 1 pack
Ice Cream – 2 cups
No.2 Blackberry Pie Filling – 1
Lemon Juice – 1 tablespoon
Directions
MAKING
1) In a bowl, mix the sugar, butter and the cracker crumbs
2) Keep aside ¼ cup of the cracker mixture
3) In a 8 inch square pan, press the mixture evenly onto the base
4) In a cup of boiling water, dissolve the gelatin
5) Tip in the ice cream and stir around to melt
6) Place in the refrigerator to chill
7) Add in the pie filling and lemon juice and fold well
8) Turn into the pan and top with the reserved crumbs
9) Place in the refrigerator to chill
SERVING
10) Serve chilled
