Creamy Bean Soup Recipe
Ingredients
2 cup navy beans dried
4 oz. lean ham, cooked and cubed
1/2 cup mashed potatoes
3 cup celery, chopped
4 med. onions, chopped
3 tsp. fresh parsley, chopped
1 clove garlic, minced
1/2 cup skim milk
1/2 cup carrots, diced to taste black pepper
Directions
1. Cover beans with water and soak overnight in soup pot. Drain.
2. Add ham. Cover with water again and bring to a boil. Reduce heat and simmer 1 hour.
3. Add remaining ingredients. Simmer 1 more hour or until beans are tender.
