Creamy Zucchini Soup Recipe
The creamy zucchini soup is a lovely and flavorful soup made with zucchini and onions. Cooked in milk and herbed with parsley, the creamy zucchini soup is herbed and spiced with a hint of garlic.
Ingredients
1 1/2 cup beef stock
2 cup water, boiling
3 cup zucchini, peeled and sliced
1/2 cup onion, chopped
1/8 tsp. garlic powder to taste
Seasoning without salt
3 cup skim milk
Garnish chives or parsley, chopped
Directions
1. Cook all ingredients, except milk and garnish, until zucchini is tender. Strain soup, reserving the liquid.
2. Puree zucchini mixture in a blender or put it through a food mill. Return to reserved liquid.
3. Add milk and stir until smooth. Heat, but do not boil. Garnish with chives or parsley before serving.
