 1 medium Vidalia onion, sliced
 Vegetable oil1 Tablespoon
 Beets16 Ounce, cooked, drained
 Chicken stock2 Cup (16 tbs)
 Plain non-fat yogurt2 Cup (16 tbs)
 Sour cream1 Cup (16 tbs)
 White wine vinegar1 Tablespoon
 Lemon juice1 Tablespoon
  Nonfat Plain Yogurt or sour cream, for garnish fresh dill, coriander or pepper, for garnish

Directions

In a small skillet, saute the onion in butter until soft.
In a food processor, combine the beets, beet liquid (only if using canned beets), chicken stock and sauteed onion.
Puree until smooth, in batches if necessary.
