1/2 teaspoon unflavored gelatin
1 tablespoon water
1 cup low-fat (1% milk fat) cottage cheese
1 tablespoon honey
1 tablespoon firmly packed brown sugar
1/4 teaspoon vanilla extract
Directions
1 In a small heatproof bowl or custard cup, sprinkle the gelatin over the water and let soften for 5 minutes.
Meanwhile, in an 8-inch skillet, bring 1/2 inch of water to a simmer over low heat.
Place the bowl in the simmering water and stir until the gelatin is dissolved.
2 In a food processor or blender, whirl the cottage cheese, honey, sugar, and vanilla, scraping down the sides once, for 1 minute or until creamy.
Add the gelatin and whirl for 30 seconds or until smooth.
Scrape into a small bowl, cover, and chill, stirring occasionally, for 2 hours or until thickened.
