Ingredients
3 envelopes unflavored gelatin
1 1/4 cups poultry broth
1 cup mayonnaise
1/4 cup heavy cream
1 tbsp lemon juice
1 1/2 tsp salt
1/4 tsp pepper
4 cups cooked turkey, diced
3/4 cup celery, diced
1/4 cup sweet red pepper, diced
1/4 cup green bell pepper, diced
1/2 cup seedless red grapes, diced
Directions
In a double boiler, dissolve gelatin in poultry broth.
Let stand to cool slightly.
In a large bowl, mix mayonnaise, cream and lemon juice.
Season with salt and pepper.
In a second bowl, combine remaining ingredients.
Set aside.
Fold gelatin mixture into creamy mayonnaise.
Add to turkey mixture, stirring well.
Pour into an 8 cup (2 L) mold.
Refrigerate 8 hours or until mixture has set.
Unmold.
Let stand to cool slightly.
