Tuna packed in olive oil - 1 jar of 6.7 ounces
 
Dried oregano - 1 pinch
 
Garlic - 3 cloves
 
Pepper flakes - a pinch
 
Mashed anchovy fillets - 1 teaspoon
 
Salt - to taste
 
Fresh ground black pepper - to taste
 
Cream of tomato soup = 3 cups
 
Water - 1/2 cup
 
Dry penne pasta - 1 package of 14.5 ounces
 
Fresh tarragon - 1 tablespoon, minced
 
Parmigiano-Reggiano cheese - 2/3 cup, finely grated

Directions

MAKING
1) In a large sauce pan over medium-low heat, add the tuna with olive oil, anchovy paste, red pepper flakes and garlic. Break the fish up and saute the ingredients for a minute or two.
2) Add the cream of tomato soup and some water. Stir to mix and turn the heat to medium.
3) Let the mixture simmer gently for 10 minutes.
4) In the meantime, cook the penne pasta in boiling salted water. Cook for about 1 minute less than the packet says. Drain the pasta.
5) In a large cooking pot, add the pasta and a pinch of fresh tarragon. Follow with the hot sauce and the grated cheese. Stir well.
6) Cover the pot and let the ingredients cook for about 2 minutes.
7) Uncover the preparation, stir and cover and cook for another minute. Uncover and stir to mix all the cooked ingredients together.

SERVING
8) Transfer the cooked pasta and sauce to a serving plate and top with some grated cheese. Serve while still hot.
