Ingredients
3/4 cup (180 ml) onions, chopped
3 tbs (45 ml) defatted chicken stock
2 cups (480 ml) fresh tomatoes, pureed or canned unsalted tomatoes
1 tsp (5 ml) sweet basil
2 medium garlic cloves, pressed or 1 tbs (15 ml) garlic powder
1/4 tsp (1 ml) coarsely ground pepper
10 1/2-oz pkg (315 g) Silken Soft or Lite Tofu , drained pinch of salt, optional margarine or butter, optional
Directions
In a medium saucepan, saute onions in chicken stock until transparent.
Add pureed tomatoes along with next 3 ingredients.
Simmer 10-15 minutes.
In a blender or a food processor, process tofu until smooth and stir into the tomato mixture.
