Creamy Stuffed Pasta Shells Recipe

3 oz. bulk pork sausage
 
2 tablespoons finely chopped green onion
 
1/2 cup finely diced, cooked chicken or turkey
 
1/2 (3-oz.) can chopped mushrooms, drained
 
1/4 cup coarsely crushed saltine-cracker crumbs
 
1 tablespoon chopped parsley
 
1 tablespoon dry white wine
 
1/4 teaspoon celery salt
 
8 conchiglioni (jumbo macaroni shells), cooked, drained, rinsed
 
1-3/4 cups Mornay Sauce

Directions

1. Crumble sausage into a 1 quart casserole. Add green onion. Microwave at 100% (high) 1-1/2 to 2 minutes or until sausage is browned; stir after 1 minute. Pour off fat. Stir in chicken or turkey, mushrooms, crumbs, parsley, wine and celery salt; blend well.
2. Stuff 2 heaping tablespoons filling into each pasta shell. Place 4 stuffed shells, filling-side up, in each of 2 dishes. Pour Mornay Sauce over shells, coating pasta completely.
3. Cover with vented plastic wrap. Microwave at 100% (high) 4 to 5 minutes or until heated through; give dishes a half turn after 2 minutes. Spoon sauce over pasta before serving. Sprinkle with cheese, parsley and paprika, if desired
