Creamy Rice Mold Recipe
Creamy rice mold is a gelatin rice mold made with chicken broth for flavor. Prepared with mayo, whipped cream and celery for taste, the creamy rice mold is chilled to set and is savory as well as mild with a delicious texture and taste.
Ingredients
| 2 envelopes (2 tablespoons) unflavored gelatin | ||
| 2 13 3/4-ounce cans chicken broth | ||
| 3/4 cup mayonnaise or salad dressing | ||
| Lemon juice | 2 Tablespoon | |
| Whipping cream | 1 Cup (16 tbs), Whipped | |
| Cooked rice | 2 1/2 Cup (16 tbs) | |
| Celery | 3/4 Cup (16 tbs), chopped | |
| 1/4 cup sliced green onion | ||
Directions
Soften gelatin in 1/2 cup cold water.
Heat broth to boiling.
Add softened gelatin and stir till dissolved.
Add mayonnaise and lemon juice; beat with rotary beater till smooth.
Chill mixture till partially set, then whip till light and fluffy.
Fold in remaining ingredients.
Pour into 8 1/2 cup ring mold.
Chill till firm.
